Celeriac Giant Prague is an heirloom variety that was introduced in 1871 and is still perhaps one of the standard cultivars. The roots have a slight taste of celery (which it is related to but is easier to grow) and aniseed. The leaves are celery-like. It has large, white, 5” round crisp globular roots that are superb fried, mashed, in soup or grated raw in salads. Stores well for winter use. Best quality is obtained if harvested when the roots are 8-10cm in diameter.

A little extra care is needed when cooking to ensure it does not taste bitter. Peel the skin and cut into cubes and add quickly to a pan of boiling water for about 10 mins until soft. (The celeriac will go brown quickly, like apples, so use straight after cutting and add to boiling water).

To help reduce bitterness in soups & stews pre-boil the celeriac in water for a few minutes and then drain away the water before adding to the other vegetables. If you wish to use raw in a salad it is worth popping it in boiling water for a minute and then plunging it into cold water, dry and use.

When to Sow:
Undercover February-April at 15C-20C or April to May in an unheated greenhouse/polytunnel or directly outside.
How to Sow:

Sow 15mm deep into moist well-drained seed compost. Ideal temp. 15-20°C. Germination takes 14-21 days. Once germination occurs transplant seedlings with 5cm spacing. Grow on in cooler, but not cold conditions. Acclimatise and plant out once the danger of frost has passed in rows 30cm apart. Plant with the upper, swollen part of the root on the surface of the soil. 
If sown when temperatures are below 10C it will encourage bolting
Care:
Keep well-watered and mulch around the plants with a good layer of compost or straw to help conserve moisture and suppress weeds. Remove side shoots and remove lower leaves from mid-summer to expose the crown to help it swell. In late Sept draw a little soil around the celeriac to keep it white.
Harvest: Start lifting from late Sept/early October. If the soil is well-drained the roots can be left in the soil until required (until following spring) but cover with a thick layer of straw or compost to protect against frost. The quality will deteriorate with those lifted and stored indoors compared to those left in the ground.
