Chilli Seeds from Sow Seeds Ltd
Pasilla Bajio chilli peppers originate from Mexico and produce chillies that mature from dark green to chocolate brown with a sweet and smoky flavour. The wrinkled pods are about 18cm long pod by 2.5cm wide and are mild in heat averaging between 1,000-1,500 SHU.
Pasilla Bajio means ‘little raisin’ and is a reference to the wrinkled chillies appearance and taste. It is a productive pepper plant and grows to between 60-90cm tall. It does take a long time to fruit so should be sown early in the UK.
Pasillo Bajio chillies are usually used in their dry from and are a key ingredient in Mexican Mole Sauce but they can be eaten fresh and are frequently added to dishes like Enchiladas and salsas.
