Guatemalan Rocoto chilli peppers are pear drop shaped, red/orange or chocolate coloured pods with a sweet flavour and medium heat levels. They are part of the Capsicum pubescens family of chilli peppers and so have the brown/black seeds and pretty purple flowers and hairy foliage that is synonymous with this family.
Rocoto chilli peppers can be slow to germinate so give then plenty of warmth, water and time but once fully grown they are able to withstand lower temperatures than many other peppers. Sow Rocoto chilli seeds early as they do need a long season to fruit.
Guatemalan Rocoto chillies have thick walls so are best used fresh, in salsas or pickled rather than dried.
