Celeriac Prinz is a little known knobbly veg that produces small to medium white, firm roots that are resistant to bolting. The roots have a slight taste of celery (which it is related to but is easier to grow) and aniseed. The leaves are celery like and add flavour to salads, soups & stews.

A little extra care is needed when cooking to ensure it does not taste bitter. Peel the skin and cut into cubes and add quickly to a pan of boiling water for about 10 mins until soft. (The celeriac will go brown quickly, like apples, so use straight after cutting and add to boiling water).

To help reduce bitterness in soups & stews pre-boil the celeriac in water for a few minutes and then drain away the water before adding to the other vegetables. If you wish to use raw in a salad it is worth popping it in boiling water for a minutes and then plunging into cold water, dry and use.

When to Sow:
Undercover February at 15°C or March to May in unheated greenhouse / polytunnel.
How to Sow:
Sow seeds undercover in February & keep at 15°C or wait until March to May to sow if no heat available. Sow seeds direct onto surface of compost in seed trays or modules (seeds need light to germinate) and make sure seeds have good contact with compost. Germination can be slow and erratic. 'Prick out' into individual pots when large enough and grow on indoors. 'Harden off' before planting into final position in late May (after last frosts). Plant every 30cm in rows 45cm apart but don't bury the crown.
Care:
Keep well-watered and mulch around the plants with a good layer of compost or straw to help conserve moisture and suppress weeds. Remove side shoots and remove lower leaves from mid-summer to expose the crown to help it swell. In late Sept draw a little soil around the celeriac to keep it white.
Harvest: Start lifting from late Sept/early October. If the soil is well-drained the roots can be left in the soil until required (until following spring) but cover with a thick layer of straw or compost to protect against frost. The quality will deteriorate with those lifted and stored indoors compared to those left in the ground.
