Aji Amarillo (also known as Yellow Peruvian Chilli or Escabeche) originates in Peru where ‘Aji’ means ‘chilli’ in Spanish and ‘Amarillo’ means yellow, although the pods will ripen from green to yellow they will finally turn orangey-yellow.
Aji Amarillo plants reach about 60cm tall and bear 10cm long by 2.5cm wide pods. The chillies are of medium heat with a range of between 30,000-50,000 on the Scoville Scale with a smoky, fruity flavour. They are a classic ingredient of Peruvian cuisine and are used fresh, roasted or dried. In its dried from it can be known as Aji Mirasol.
