Chilli Seeds from Sow Seeds Ltd
Aji Panca Chilli Peppers (also known as Aji Brown) originate from Peru and are the 2nd most commonly used variety. The peppers are large, reaching up to 15cm long by 2.5cm wide and they mature from green to yellow to a rich burgundy red when fully ripe.
Aji Panca chillies are mild and if the seeds and veins are removed the pods have very little heat. They are however grown for their smoky, fruity flavour which adds a depth of flavour and colour to dishes. The chillies are rarely used fresh and are mostly used dried when the pod turns a rich brown colour.
The dried pods can be ground to a paste or used as chilli flakes/powder to sprinkle over meals. They are frequently used to flavour BBQ sauces, stews and soups and are a key ingredient for Mexican Mole sauce.
Aji Panca is a very mild chilli but its bold smoky, fruity flavour is perfect for perking up meals.
